20 May 2018 - A quick stop at Restoran Ipoh - Ipoh salt-baked chicken, kuchai lama. Traditional Hakka recipe, bake the marinated kampong chicken in a big wok of coarse salt. Why so much salt?
Traditionally salt method was used as food storage preservatives. Wrapping chicken using parchment paper, then covered fully by coarse salt, slowly baked.
Delicious savory, juicy chicken, it won't be as salty as you thought it was.
Homemade minced meat tofu was awesome too.
